Smoked Garlic and Herb Aioli

Ingredients
  • 2 Garlic cloves (Minced)
  • 1 Large egg yolk
  • 2 tsp. Fresh lemon juice
  • 1⁄2 tsp. Dijon mustard
  • 1/3 cup Holy Smoke Smoked Olive Oil
  • 2 tsp. Parsley (Chopped)
  • 1 tsp. Basil (Chopped)
  • Holy Smoke Smoked Sea Salt and Smoked Pepper to taste

Preparation
In a food processor, combine garlic, egg yolk, lemon juice and Dijon mustard. Turn the food processor on and slowly drizzle Holy Smoke Smoked Olive Oil until it is completely emulsified. If it is thicker than you wanted, just add a couple of drops of water until it reaches your desired consistency. Transfer to a bowl and fold in the parsley and basil and season to taste with Holy Smoke Smoked Sea Salt and Smoked Pepper. This delicious sauce can be used for anything from sandwiches to french fries to roasted vegetables.
