How to Make Smoked Olive Oil
Smoked Olive Oil can be made in a variety of ways, but we cold-smoke our olive oil to ensure it stays raw and retains all of it's chemical and nutritional properties. Smoking olive oil in the traditional way (hot) destroys the integrity and flavor of the oil and will cause it to go rancid, so it cannot be stored. It also adds moisture to the olive oil, which is not a good thing.
We created a machine that keeps the extra virgin olive oil near-freezing while the hickory smoke envelops it. It's basically smoked just like you smoke meat, but without the heat.
